I am a multiple Culinary Olympics medal-winner (19XX Gold/Silver/Bronze), and received my culinary training in Europe and North America including the French Culinary Institute. Over my career I have held positions ranging from Executive Chef, Pastry Chef and Private Chef. I have cooked for the Democratic National Convention, an Eastern Prince and have catering experience. I am fluent in the language of the professional kitchen and formal staff as well as the language of the cocktail party and the family dinner table, and can help put together a backyard barbecue or an elegant dining experience. I will get everyone involved in learning the tips, tricks and techniques that bring a dish together while insuring that everyone has a great time. While I have a strong background in pastry, I have assimilated a world of cuisine influences during my travels.

I started my career in Europe as a Chef in one of the most prestigious restaurants of the Italian Islands of Sardinia. Among my employer are famous Chefs such as Lydia Shire, a James Beard winner, Joe Bastianich of the Bastianich family, Owner with Mario Battali (Molto Mario) of Babbo. Obviously, my Italian origins have a significant impact in everything I do, but I reflect different cultures in my cooking style. I love to entertain and relate stories of my culinary travels from Italy to the Rockefeller Plaza which has introduced me to great Chefs and great flavors. I am an entertainer in the kitchen and everything that I cook comes from a place in my soul which transforms my food. You will have a great time learning, laughing and eating! I am fluent in English, Italian, French and Spanish.

I am currently a culinary arts instructor, teaching "at-risk" youth. Food is my life and what I am most passionate about. I am very outgoing and I enjoy teaching others about different ethnic foods. I have traveled and studied regional cuisines in places such as Club Med, Walt Disney World and The Prime Grill in Miami, FL. Through these experiences I learned new cuisine under a multicultural chef team including Mediterranean, Mexican and Dominican and Brazilian cuisine. I love to grow and dry several varieties of peppers and my cuisine represents bold color and flavor. I had the opportunity to prepare a special V.I.P. dinner for former President Jimmy Carter and associates of the Carter Foundation. I studied at Johnson & Wales University where I earned an Associate of Science in Culinary Arts degree.

I have an extensive nutritional background and a varied cooking history focusing on special Dietary needs, health and nutrition. While in the Santa Rosa area, I was one of two instructors for a Certified Whole Foods Chef focusing on vegetarian foods for approximately 17 students. Fast, easy tips and tricks for turning the usual favorites into something a little healthier with no more time and effort is something that I get excited about. It's easier to prepare foods that promote health when you like how you feel and look. Once of the highlights of my Culinary career was being the Private Chef for the crew and guests of 120' yacht during the entire cruising season.

I have been cooking professionally for almost 20 years. My influences have been gained through stints in Las Vegas, a major hotel in San Diego and cooking in Gaja la Selve, France. After Europe, I moved to Portland, my favorite American city. I truly enjoy teaching technique that turns fresh ingredients into culinary magic. My cuisine ranges from simple home-cooked Soul Food to a 15 course tasting menu as well as Regional Mexican, Authentic Japanese style sushi, Classique French, Italian, or Authentic Brazilian cuisine.
